Looking for a delicious, healthy weekday meal? Ditch the bread and try bruschetta chicken instead! It retains the fresh, tangy flavors of the traditional recipe, but turns it into a protein-packed main dish with the substitution of tender white meat chicken. This dish is especially delicious in the summer when tomatoes are in season, but can truly be a staple meal all year long.

  • 4 boneless, skinless chicken breasts
  • 2 tbsp. olive oil
  • 1 tsp. Italian seasoning
  • 1 tsp. garlic powder
  • 1 tsp. crushed red pepper flakes, optional
  • Salt & pepper, to taste
  • 3 plum tomatoes, chopped
  • 2 tbsp. fresh basil, chopped finely
  • 2 tsp. fresh lemon juice


  1. Pound chicken breasts to an even thickness, about 1" thick. In a bowl, combine olive oil, Italian seasoning, garlic powder, salt and pepper. If you prefer a little added spice, stir in the crushed red pepper flakes. Coat chicken in the mixture evenly, allowing to marinate in the refrigerator 30 minutes.
  2. Meanwhile combine chopped tomatoes, fresh basil and lemon juice in a bowl; set aside.
  3. Grill chicken 5-7 minutes each side, or until completely cooked. Top chicken with tomato mixture and serve!
