Ingredients

  • 2 filets, about 1 ½ - 2 inches thick
  • Salt & pepper, to taste
  • Olive oil, for oiling the grate

Instructions

  1. Rest filets at room temperature for 30-45 minutes. This will allow a more even, thorough cooking on this thick cut of beef.
  2. Preheat your grill to 450 while the filets are resting, about 15-20 minutes. Searing the meat before cooking internally will prevent overcooking.
  3. Carefully add olive oil to your grill rack as it comes up to temperature, which will keep the filets from sticking.
  4. Season your steaks with salt and pepper. Keeping it simple with the seasoning lets the flavor of this great cut of meat shine through.
  5. Place filets on the grill and close the lid. For medium-rare, grill 5 minutes on the first side, then flip and rotate, grilling 5 more minutes on the other side. Do not puncture the meat while grilling, use a grill-safe spatula.
  6. Remove and let rest 5 minutes, with a lightly placed foil tent. The meat will rise a few more degrees while it continues to cook internally. The final temperature for medium-rare steak should be 130-135. Serve plain or with sauce of your choice.
