Recipe Difficulty: Easy

Bring the fresh, tangy, oh-so-tasty flavors of the Mediterranean to your grill with our chicken gyros recipe, then complete with homemade tzatziki sauce and warm pita. We suggest whipping up the chicken gyro marinade the night before, to allow the protein to fully soak in the flavors. The tzatziki sauce can be made ahead as well and kept chilled in the refrigerator. Then come lunchtime, dinnertime or game time, these chicken gyros are a snap to grill and assemble. They do get a little messy though, so if you’re serving up to a party, try wrapping each in waxed paper to make them easier to hold!

Instructions

  1. How to make the marinade: In a mixing bowl, add all marinade ingredients and whisk to combine. Transfer marinade to a large resealable bag and add chicken; let marinate for at least 2 hours to overnight.
  2. How to make tzatziki sauce: Grate the cucumber over the large holes on a box grater; squeeze out excess moisture once grated. In a mixing bowl, add cucumber and remaining ingredients, combining well. Serve immediately or chill for later.
  3. How to make the gyros: Grill marinated chicken over medium-high, about 5 minutes per side or until completely cooked; allow to rest and slice into strips. Grill onion, pepper and pita until grill marks form. Assemble each gyro by adding chicken, onion, pepper and tomato slices to the pita, roll and then drizzle with tzatziki sauce.
