You might not fool people into thinking this grilled carrot is a hotdog, but you surely will leave them thinking it’s delicious. This healthy take on a classic is perfect for heart-healthy summer grilling. Try different variations using your favorite toppings and enjoy this unconventional treat.
- 4 carrots
- ½ cup vegetable broth
- ¼ cup cider vinegar
- 2 tbsp. soy sauce
- ½ tbsp. Dijon mustard
- 1 tsp. fresh garlic
- 4 hot dog buns
- Your favorite toppings
- Steam carrots over the stove for 10-13 minutes or until just tender. Hint: be sure not to overcook them, as you will be marinating and grilling later!
- Mix veggie broth, cider vinegar, soy sauce, mustard and garlic in a shallow pan. Add carrots, cover and marinate for 6-8 hours.
- Grill carrots on high heat until grill marks appear, about 5 minutes, rotating occasionally.
- Grill your buns, add carrots and go wild with your favorite toppings -- we used red onion, sliced jalapenos, romaine lettuce and sriracha sauce!
