Ingredients

  • 16 large shrimp
  • 8 pieces bacon
  • 1 tbsp. olive oil
  • Salt & pepper, or your preferred seasoning, to taste

Instructions

  1. Preheat grill to 425.
  2. Peel shrimp leaving the tail on and devein, then toss in a bowl with olive oil and seasoning.
  3. Cut bacon slices in half longways, to make thin strips. Turn off one burner to create an indirect heat zone, and grill bacon with the lid open about 5 minutes. The bacon should be easily bendable, not crisp.
  4. Wrap one slice of bacon around each shrimp and secure with a skewer. If using bamboo, make sure to soak at least 15 minutes in water before using.
  5. Grill another 5 minutes on each side over indirect heat until shrimp and bacon are fully cooked.
