Spicy Buttermilk-Beer Chicken

Impress your taste buds with these sweet and spicy chicken wings. Add your favorite IPA for an extra hoppy flavor sure to please all of your craft-beer loving friends.

 

BUTTERMILK-BEER CHICKEN INGREDIENTS

  • 2 lbs. chicken wings or drumsticks
  • 1 bottle favorite IPA
  • 2 cups buttermilk
  • 1 onion, sliced
  • 1 tbsp. brown sugar
  • 2 tsp. paprika
  • ½ tsp. cayenne
  • Salt, to taste
  • Rosemary sprigs, optional for serving

 

GLAZE INGREDIENTS

  • 4 oz. favorite IPA
  • 1/3 cup white wine
  • 1 tbsp. salt
  • 4 tbsp. Sriracha
  • 1/3 cup brown sugar
  • 4 tbsp. tomato paste
  • 2 tbsp. fish sauce
  • 2 cloves garlic, minced
  • Salt, to taste

 

INSTRUCTIONS

  1. To make marinade for chicken, mix together your favorite IPA, buttermilk, brown sugar, paprika, cayenne, cumin, and salt until combined. Then add onions and chicken to bowl or zippered bag. Place in refrigerator overnight.  
  2. To make glaze, first mix the white wine and sugar until combined. Then in a saucepan, whisk together white wine mixture with IPA, Sriracha, brown sugar, tomato paste and fish sauce over medium-high heat. Bring to boil and stir until thickened.
  3. Take chicken out of refrigerator and remove from marinade.
  4. Turn grill onto medium-high heat.
  5.  Brush chicken with glaze and grill for 2 minutes. The flip and brush other side with glaze. Flip and brush chicken every couple minutes until cooked through.
  6. Remove chicken from grill and serve with rosemary sprigs. Enjoy!
