When roasted, the flavor and texture of garlic transforms remarkably. The pungent spiciness of raw garlic turns to a caramelized, nutty, and buttery treat with just the addition of just olive oil and heat from your grill. Roasted garlic can be used as an ingredient – a perfect addition to mashed potatoes, pasta dishes, pizza, and sandwiches – or simply spread it on crusty bread as you would a good soft cheese.

Ingredients

  • 1 bulb garlic
  • Olive oil

Instructions

  1. Preheat grill for high, indirect heat.
  2. Slice approximately ½ inch off the top of the garlic bulb, exposing the individual cloves; place on a piece of foil with the cloves facing up.
  3. Generously drizzle the exposed cloves with olive oil; wrap the foil around the garlic.
  4. Grill over indirect heat 45 minutes, or until the garlic cloves are soft and golden.
  5. Remove carefully from the grill, unwrap, and pop out the roasted cloves with a small knife or fork. Roasted garlic can be used immediately as needed.
