- 2 lbs. Brussel sprouts, halved and dried
- 1/2 cup parmesan, grated
- Salt and pepper to taste
- Fry Brussels sprouts in four batches at 350 for about 3 minutes each, or until sprouts turn golden brown and float to the top of the oil.
- Use a large spider strainer to carefully remove each batch from the hot oil and let drain over a paper towel.
- Transfer to a large bowl while warm, sprinkle with parmesan cheese, salt, pepper and serve.
