There’s nothing quite as satisfying as cheesy, saucy, savory Chicken Parmesan. This lighter grilled take on an Italian classic skips the breadcrumbs… but not the flavor. Ready in just 25 minutes and prepared with a few simple ingredients, it’s a great option for a quick and delicious weekday meal.

Ingredients
- 4 boneless, skinless chicken breast halves
- Olive oil
- 1 tsp. garlic powder
- 1 tsp. Italian seasoning
- Salt & pepper, to taste
- 4 slices fresh mozzarella
- 4 tbsp. grated parmesan
- 1 ½ cups marinara sauce
Instructions
- Preheat grill to medium high.
- Use a meat mallet or heavy pan to pound the chicken evenly until it’s ¼” thick. Brush both sides of chicken with olive oil, then season with garlic powder and Italian seasoning.
- Grill the chicken over the grate about 3 minutes per side.
- Transfer the chicken to a grill-safe pan and place on top of grate. Generously spoon marinara sauce on each piece and then top with mozzarella and parmesan cheese.
- Close the grill cover for 2-3 minutes to allow the cheese to completely melt, then serve immediately.
